Sunday in the kitchen ~ Lentil Soup


Soup…the ultimate comfort food, right?

There’s just something soothing to having a pot of hearty soup simmering on the stove on a cold winter day.

And it’s even better the man you’re cooking for loves it!

Here’s my recipe for a hearty Lentil Soup…hope you enjoy it.


1 16oz bag lentils (soak overnight, drain and rinse before using)

In a stock pot, saute 1 tbs chopped garlic, 1 chopped onion, 2 ribs chopped celery, 2 large carrots, chopped, until the onions are translucent.

Add 1 tbs dried thyme, 1 tbs coriander, salt & pepper to taste

Add 1 large can crushed tomatoes, 2 cups chicken stock, 2 cups water and the rinsed beans.

Let simmer for an hour.

Puree half the mixture.

Add chopped ham cubes (I use the fully cooked ham steaks)

Simmer until all flavors meld together.

Serve hot with grated parmesan cheese or toasted bread.
